I'm having DH's sis and her DH (SIL and BILIL?) over for dinner tonight for pasta. I'm really excited; the recipes are sooo yummy. Here are two of them:

Nothing exciting to share - we are having leftovers. Baked pork chops and steamed rice. So glad I don't have to cook and less dishes to wash :)

I have to take DS clothes shopping after work, I think he has 3 pairs of pants with no holes in the knees right now! DH is playing poker with friends so I'm thinking McDonald's tonight!

I'm going to make pork chops with peppers - easy and quick! I just cook the chops in a skillet with a little olive oil, garlic and a multi-seasoning mix. When they're close to being done I throw in some green and red bell pepper strips and cook until the peppers wilt some. Yummy :)

We're having Havana Chicken- I made it at a dinner prep place last month and it is currently defrosting in my fridge. It's chicken breast that has been soaking in/frozen in a mojo type marinade. We'll grill it and put it in a tortilla with a blak bean and pineapple salsa. Yum Yum!!

Leftovers here too. I made a casserole last night that never really got eaten so we are going to have that today. Its mashed potatoes, broccoli, chicken and biscuits.

Here's what we are having! Its yummy!
Penne with Shrimp, Garlic, Lemon, and Basil
1 pound penne pasta
3 T. olive oil
2 garlic cloves, minced (I use 2 TBS of minced wet jarred garlic)
1/2 t. dried red pepper flakes
1 pound medium shrimp, peeled, deveined, and cut in half lengthwise
1/4 c. freshly squeezed lemon juice (about 2 lemons)
1/2 c. fresh basil leaves, julienned (no substitutions!)
1 t. salt
1/4 t. freshly ground black pepper
freshly grated parmesan cheese
Bring a large pot of lightly salted water to a boil over high heat. Add the penne and cook until tender. Drain well and return to the pot.
While the penne is cooking, heat the oil in a large saute pan over medium-high heat. Add the garlic, pepper flakes, and shrimp, and cook, stirring, just until the shrimp turns pink, 2-3 minutes.
Once the penne is back in the pasta pot, add the shrimp, lemon juice, and basil, and toss well. Add the salt and pepper, adjusting to taste, and add more lemon juice if desired. Serve immediately with plenty of parmesan cheese.

This is basically what we are having too. Leftover shake-n-bake pork chops and whatever side we decide later. The less dishes the better tonight, I don't want to be up all night washing dishes. lol

We went out for yummy Mexican food last night so we should probably eat at home tonight! I've got a pound of lean ground beef in the fridge so I'm thinking sloppy joes, cheesy scalloped potatoes and a vegetable (either corn or green beans)!
