Salsa
my Dad's special recipe
15 Italian plum tomatoes, diced
1 med. onion, diced
1 tsp. salt
1/2 tsp. black pepper
2-3 tsp ground cumin
2 T. red wine vinegar
Juice of 1 lemon
Dash of Frank's Red Hot Sauce
1/2 c. fresh cilantro leaves, chopped
Stir together all ingredients. Refridgerate several hours before serving with tortilla chips.
Hot Crab Dip
1 lbs. lump crab meat
2 lg. cream cheese
1 c. sour cream
4 T mayonaise
3 squirts lemon juice
3 tsp. Worcestershire sauce
dash of garlic
dash of hot sauce
3/4 c. grated cheddar cheese on top
Cream together all ingrediants. Mince cheese and crabmeant. Fold in crabmeant. Sprinkle with cheese. Oven 350 degrees, bake 30-40 minutes. Serve with crackers. (I like Trisquits best)
Veggie Pizza
2 pkgs. crescent rolls
1 c. mayonaise
1 pkg ranch dressing
2 (8 oz) cream cheese
cut-up veggies
1 1/2 c. shredded cheddar cheese
Spread crescent rolls flattened on 10x15 cookie sheet. Bake as directed on package. Mix mayo, ranch dressing, and cream cheese. Spread on cooled crust. Top with diced veggies (red onion, olives, broccoli, cauliflower, carrots, peppers, etc.) Top that with shredded cheese. Cut into bars.

Apple Berry Fizz
Ingredients:
1/2 cup Strawberries/raspberries, fresh or frozen
1 cup Apple juice
1/2 cup Ice cubes with frozen berries, or use water instead
1/3 cup Oat bran cereal
1/2 cup Club soda
Directions:
Place apple juice, berries, ice cubes or water, oat bran cereal, and club soda into blender. Process until smooth, about 30 seconds. Pour into glasses and serve immediately.
Beat The Heat
Ingredients:
Juice of 1 Lemon
2 tbsp Maple Syrup
Dash Cayenne Pepper
16 oz bottle of Ice Water
Directions:
Add lemon juice, syrup and cayenne pepper into a glass. Fill with ice water. Stir.
Best kind of glass for this drink: Collins.
Play off of the lemonade diet about a year ago, but I really liked the way it tasted so I still drink it...
Crockpot Tropical Tea
Serves: 10
Ingredients:
6.00 c Boiling water
1.50 c Orange juice
6.00 ts Bags
1.50 c Pineapple juice
0.33 c Sugar
1.00 Orange sliced (unpeeled)
2.00 tb Honey
Directions:
Warm your crock-pot first with some hot tap water. Then pour boiling water over the tea bags in the >> crock-pot. Cover and let stand 5 minutes. Remove the tea bags. Stir in the sugar, honey, orange juice, pineapple juice, and orange slices. Cover and heat on low for 2-3 hours; serve from pot.
As I am sure everyone can tell, totally more of a drink girl then a cook. :rolleyes: Anywho, Andrea I really love the way that Salsa sounds, I think I am going to try it. Although do you have a tip on dicing tomato's I always crush them more then dice so I pass that job off when I do cook.

Cheese Balls
2 8 oz. cream cheese
1 package Hidden Valley Ranch dressing
1 1/5 cups cheddar cheese
2 cup chopped pecans
Mix the cream cheese and Hidden Valley Ranch dressing together adding the cheddar cheese. Form in to a ball and the roll in the pecans. Chill for one hour.

Walking Tostada
Refried beans
Diced Green Chili peppers
Chopped olives
Chopped tomatoes
Shredded cheese
Layer ingredents in a dish and serve with tortilla chips. If served hot add a layer of browned hamberger after the refried beans.

Hot Cider
1 gallon apple cider
1/2 c packed brown sugar
4 sticks of cinnamon
2 T whole cloves
2 oranges sliced
Combine ingredients in a crockpot. Cover and heat on low 2-5 hours. Take out oranges after 2 hours or oils in the rind will make cider bitter.
Cheesy Bread Bowl
I make a bread bowl that always seems to go over well. Get a loaf(round) of sourdough bread and cut a hole around most of the top. Pull the bread out of the crust and cube it- leaving the crust intact to make a "bowl" for the filling. On the stove, combine 1 pkg of cream cheese(sliced up), 1 pkg of cheddar cheese(sliced up too) and 1/2 a can of beer. Cook until the cheese is melted. Put your bread bowl on a plate larger than it and arrange the cubes of bread around it. Pour the cheese mixture into the bowl. Dip and enjoy!
Buffalo Chicken Dip
10 oz can of chicken
1 8 oz cream cheese
8 oz Ranch Dressing
2 cups of shredded cheddar cheese
1/3 cup Hot Sauce OR Buffalo Wing Sauce
Mix all ingredients together. Heat oven to 350*, and cook for 30 min. till bubbly. Serve with tortilla chips.
Snicker's Salad
Blend a brick of Cream Cheese with 1/2 to 3/4 bottle of Caramel Ice Cream topping.
Dice up 3 or 4 Granny Smith apples, 3 or 4 Snickers Bars, and mix well into cream cheese mixture. Stir in some peanuts and serve.

Billy's Cheese Dip
1 block of Velvetta (queso blanco is best if you can find it)
1 can of evaporated milk (the large can)
1 bunch of green onions (finely diced)
1 bunch of cilantro (finely chopped)
jalapeños if you like
a few stalks of celery (finely diced) if you want to add some bulk to it
Slowly melt the cheese in a heavy duty pot. When it is halfway melted add the veggies. Add the evaporated milk a little bit at a time until you get the desired thickness or thinness.

Slow Cooker Spiced Cranberry-Apple Cider
Partner apple cider with cranberry juice for a new flavor twist on a popular hot drink.
Prep Time:5 min
Start to Finish:4 hr 5 min
Makes:24 servings (1/2 cup each)

1/3 cup packed brown sugar
2 teaspoons whole allspice
4 sticks cinnamon (3 inch)
1 bottle (48 oz) apple cider (6 cups)
1 bottle (48 oz) cranberry juice cocktail (6 cups)
1. In 4- to 5-quart slow cooker, mix all ingredients.
2. Cover; cook on Low heat setting 4 to 6 hours. Before serving, remove allspice and cinnamon.
Roast Beef Pinwheels
1 (8oz)cream cheese,soft
1/3 c chopped green onion
1/4 c chopped fresh parsley
2 Tbs prepared horseradish, drained
1/4 tsp salt
1/4 tsp garlic powder
8 oz deli roast beef, sliced
3 10in flour tortillas
Combine first 6 ingred.
Place the tortillas on work surface, spread half of cheese over each, top each with half of the roast beef slices, leaving a 1/2 in border around edges.
Roll up, wrap tightly in plastic wrap.
Refrigerate til firm,up to 1 day ahead.
cut diagonally into 1/2in slices and serve.

Spiced Pomegranate Sparkler
1/2 cup unsweetened cranberry juice
1 star anise
3 cinnamon sticks
1 cup pomegranate juice, chilled
1 cup sparkling water, chilled
ice cubes
2 lime wedges
In a small saucepan, heat cranberry juice, star anise, and 1 cinnamon stick to boiling over medium heat. Reduce heat to low and simmer 10 minutes. Cool and discard spices.
Stir pomegranate juice and sparkling water into cranberry mixture. Fill 2 tall glasses with ice. Pour pomegranate mixture over ice and granish with lime wedges and remaining cinnamon sticks.
Peachy Iced Tea Sangria
1 tub Crystal Light Peach flavor low calorie Iced Tea mix
5 cups cold water
1 cup orange juice
2 peaches, sliced
1 cup raspberries
1 cup blueberries
Place contents of drink mix tub in plastic or glass pitcher. Add cold water and orange jiuce and stir until disolved. Stir in fruit. Serve over ice in tall glasses.
Sun-Brewed Iced Tea
Place 2 quarts water in a large pitcher. Add 6 large mint springs, cruched; 1/4 cup sugar; and 6 to 7 tea bags. Cover pitcher and let stand in sun 2 to 4 hours. Remove tea bags. Serve over ice garnished with addtional mint sprigs. Refrigerate tea up to 3 days.

Cheesy Meatball Poppers.
1.5 lbs hamburger
1 package of spaghetti sauce powder
1 egg
1/2 onion. chopped fine
1 tbspn worcestershire sauce
1 Jar of Marinara Sauce
1 cup of mozzerella cheese shredded
8 ounces mozzarella cheese, cut into 1/4-inch cubes
In a 1 gallon Ziploc bag mix all but the marinara and cheese
Form meat around the cubed cheese into bite size balls.
Bake the cheese-stuffed meatballs in the oven on parchment paper at 350 degrees for 20 minutes (or until brown)
While the meatballs are in the oven, in a crockpot or saucepan if you don't have a crockpot, heat the marinara sauce. Add the hot meat balls to the warm sauce and sprinkle the shredded marinara on top.
Serve with toothpicks when the cheese is melted on top.

Creamy Choco-Coffee
I drink this almost every morning when its chilly.
1 Cup of Hot Coffee
1 Packet of Hot Chocolate
2 tablespoons of Vanilla Creamer
Mix the above and top with Mini Marshmellows and Hersheys Chocolate Syrup
Look....I am drinking it now :giggle:

Gozlemeler (Turkish appetizer)
tortillas
olive oil
feta, crumbled
mozzarella, diced or shredded
fresh spinach, chopped
Heat small amount of olive oil on a griddle/frying pan. Place tortilla on pan, put 1 serving of feta, mozzarella and spinach on half, and fold closed. Flip. Cook until cheese is melted and tortilla is slightly golden.
cut into thirds, serve warm.

Black Bean Salsa
1 (15-ounce) can black beans, drained
2 plum tomatoes, seeded and chopped
1/4 red onion, finely chopped
1 jalapeno pepper, seeded and finely chopped
1 clove garlic, finely chopped
1 lime, juiced
Salt
A few dashes hot sauce, to your taste
Chopped cilantro leaves, optional
Mix first 8 ingredients and garnish with cilantro, optional. Serve with plantain chips and root veggie chips for scooping.

Walnut & Bleu Cheese Coated Grapes
2/3 cup finely chopped walnuts
6 ounces crumbled Cabrales (Spanish blue cheese), Roquefort or Gorgonzola may be substituted
4 ounces cream cheese
20 loose seedless red grapes (about 1/4 pound with stems)
Preheat oven to 325 degrees F. On a sheet pan spread out the walnuts and toast in the oven for 7 to 9 minutes. Remove from oven and allow to cool.
In a bowl with an electric mixer, cream together the blue cheese and the cream cheese until smooth. Put one tablespoon of the cheese mixture in the palm of one hand and in it roll a grape, shaping the mixture around the grape to coat. Cover the remaining grapes and chill on a sheet pan for 15 minutes. Roll the cheese-coated grapes in the walnut mixture to cover completely and chill for 30 minutes or until coating is firm. Using a sharp knife cut grapes into halves.

Fruit Ice
from My Mom!
3 cups Water
3 Oranges
2 cups Sugar 3 large Lemons
3 Bananas mashed well
7-UP to be used when served
Boil water and sugar in saucepan for 5 minutes. Cool well. Extract the juice from lemons and oranges, mix all ingredients except 7-UP and pour into container and freeze until slush stage. Pour mixture into blender jar and mix lightly. Refreeze until firm. Spoon into cups or bowl and pour 7-UP over to desired taste.
**This drink is excellent for anyone having had surgery of any kind.
Artichoke & Spinach Dip
½ cup mayonnaise
2- 8 oz. cream cheese softened
1 can artichoke hearts, drained & chopped
½ cup chopped spinach
2 cloves fresh garlic, minced
½ cup grated, fresh parmesan
Dash Salt & Pepper
Whip cream cheese and mayonnaise together. Add the rest on the ingredients and place in shallow baking pan. Top with additional parmesan cheese. Bake at 350o for 30-35 minutes until cheese browns. Serve warm on sliced baguette.

Ok didn't read through each before posting so hoping these don't duplicate anyone.
A favorite here is...
Bacon Wrapped Chestnuts
2 cans La Choy whole chestnuts
1 lb. bacon, sliced quarterly
Greese a baking dish with Pam. Wrap chestnuts with 1/4 slice bacon and secure with a toothpick. Bake at 375 for 45 minutes.
2 cups ketcup
1 cup sugar
1 cup brown sugar
Mix all ingredients together to make sauce. Pour over chestnuts. Bake for another 30 minutes at 375.

Bean dip w/ Fritos
8oz Italian dressing
2 cans black-eyed peas – rinsed
3 cans Rotelle tomatoes with green chiles, drained
1 can shoepeg corn, drained
1 bunch of green onions – chopped
½ bunch cilantro (or more) – chopped
Garlic and salt to taste
Serves enough for a party
