Vegetables & Side Dishes

Baked Pineapple Bread Pudding
4 eggs beaten
1 c sugar
1/4 c butter, melted
2 T flour
1 can crushed, undrained pineapple
4-5 slices white bread, cubed
Combine first 5 ingrediants; add bread cubes. Pour into 1/2 qt. casserole dish. Bake 1 hour at 350 degrees.
Cranberry Sweet Potatoes
6 lg sweet potatoes or yams
1 ctn. cranberry orange relish
1 c raisins
1 stick softened margerine
1 c brown sugar
1 c chopped pecans
Peel sweet potatoes, cut into cubes. boil until soft, drain and mash. Add raisins and relish. Mix well and put into a large casserole dish. In a seperate bowl mix together brown sugar, margerine, and nuts. Sprinkle over top of sweet potatoes. Oven 350 degrees; bake for 30 minutes.

Orzo with Parmesan and Basil
INGREDIENTS
2 tablespoons butter
1 cup uncooked orzo pasta
1 (14.5 ounce) can chicken broth
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil
salt and pepper to taste
2 tablespoons chopped fresh basil
DIRECTIONS
Melt butter in heavy skillet over medium-high heat. Stir in orzo and saute until lightly browned.
Stir in chicken stock and bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15 - 20 minutes.
Mix in Parmesan cheese and basil. Season with salt and pepper. Transfer to shallow bowl. Garnish with basil sprigs.

Au Gratin Potatoes
8 medium potatoes, diced
1 can cream of chicken soup
1 cup sour cream
1 1/2 cup shredded cheddar cheese
1 stick butter
corn flakes
Boil the potatoes. After they are soft, put them in a 9x13 casserole dish. In a saucepan, put the butter, sour cream, soup and cheese. Heat until they are all blended into a sauce. Pour over the potatoes top with crushed corn flakes. Bake on 350 for one hour.
Strawberry Salad
2 cups strawberries
1 16 oz. package cottage cheese
1 cup cool whip
1 small package strawberry jello
Cut the strawberries. Add the cottage cheese and cool whip. Once it is all mixed, add the dry jello mix and mix well. Chill for 30 minutes before serving.
*Note: this salad is really good with mandarin oranges too.

Green Beans
1 pkg green beans, THAWED
1/2 c parmesan cheese
1/2 c bread crumbs
1 TBS butter
salt & pepper to taste
Lay out green beans in an oven safe dish. Sprinkle parmesan and bread crumbs evenly over top, and dot with butter. Bake at 400* for 10 minutes. Stir and bake for 10 minutes more.
Hashbrown Casserole
1 pkg hashbrowns, thawed
1 Lg sour cream
2 cans of cream of potato soup
2 cups of shredded cheddar
1/2 tsp garlic salt
1/2 cup parmesan cheese
Mix everything together, except parmesan. Spread out into a 9x13 pan. Sprinkle parmesan on top, bake at 350* for an hour.

Oh I have had this before but we call it funeral potatoes. DO NOT ask me why. :rofl:
Also, if you put tater tots instead of hashbrowns and add groundbeef as a layer it makes tator tot casserole. YUMMMMM!!!!!!!!

My fave to make is...
Rosemary Roasted Red Potatoes
Pre-heat oven to 450
Cut up a bag of red potatoes into small, even sized slices.
Spray a cooking spray on a large cookie sheet
Lay out the potatoes in an even layer and drizzle Extra Virgin Olive Oil over the top.
Sprinkle with fresh or dried Rosemary, Kosher Salt and Pepper
Bake until lightly brown and tender.
Sooooo YUMMY and sooo easy!!!

Garlicky Green Beans with Pine Nuts
Hands-on time: 15 minutes. Total time: 15 minutes. Serves 6-8
Ingredients:
1 1/2 pounds green beans, trimmed
2 T olive oil
2 large cloves garlic, thinly sliced
1/3 cup (about 2 oz) pine nuts
Kosher salt and pepper
Directions:
Bring a large pot of salted water to a boil. Add the green beans and cook until just tender, 3-5 minutes. Meanwhile, heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring, for 1 minute. Add the pine nuts and cook until golden brown, about 3 minutes. Drain the green beans and transfer to the skillet. Add 1/2 t salt and 1/4 t pepper and toss to coat. Transfer to a serving bowl.
Make-ahead note: this dish can be partially prepared up to 2 days in advance. Blanch the green beans by boiling until tender. Plunge them into an ice bath to stop the cooking. Drain and refrigerate, covered, until ready to saute with the garlic and pine nuts. Cook the green beans until heated through.

Broccoli Casserole
1 1/2 to 2 (16 oz) bags of broccoli cuts
1 lb Velveeta cheese, melted
Ritz cracker crumbs
2 sticks butter or margarine, melted
Layer broccoli, cheese, scattering of crumbs and butter. End with a layer of brumbs. Bake for 45 minutes at 350.

Best Baked Beans
4 cans pork & beans (or Busch's Baked Beans)
2 cans lg Butter Beans (drained some)
2 cans Kidney Beans (drained some)
15 oz. tomato sauce
1 cup brown sugar
1 TBS mustard
1 pkg. onion soup mix
1 Kielbasa, cut up, boiled 10 minutes
Mix everything into a Crock Pot on Low for a few hours, or baked at 350* for 1 hour.
**I halve this for my family, ALL of it for a cookout/ picnic

Oriental Ginger Salad
1 bag of Dole 7 lettuce'
3 chopped green onions
fried wonton strips (Dole makes garlic ginger flavored that are very yummy)
1 can of mandarin oranges
toasted almonds
Lite House Asian Ginger Dressing (delicious and FAT FREE!!!)
I usually add chicken strips to this and have it as an entree - the whole family loves it!
