I thought it might be fun to see what international recipes people may have up their sleeves!
One of my favorites, something that's super-easy and that everyone likes:
Gözleme (adapted and simplified from delicious Turkish meal)
Ingredients:
Tortillas
Mozzarrella cheese, cut into tiny squares
Feta, crumbled
Fresh Spinach, chopped/ripped into small pieces (I use baby spinach because it's sweeter)
Olive oil
Directions:
Heat small amount of olive oil in a pan over medium heat
Put a handful of both cheeses and spinach on one side of a tortilla. Put tortilla in the heated pan and fold in half.
Grill until both sides are lightly golden and cheeses are melted.

well... being half Cuban myself.... :giggle:
OK, here is the Pork recipe and the Black Beans & Rice recipe that my Cuban Abuela (gramma) makes:
Mojo Marinade for Pork (prn, mo-ho)
3 T of wet jarred garlic
2 T of cumin spice
1 c orange jiuce
juice of 1 lime
salt, pepper, COmplete Seasoning to taste
Fresh arm/shoulder pork (Butt end)
Mix marinade, knife holes into pork, and spoon marinade with chunks into holes. Pour the rest over the top and marinate overnight.
Roast the next day in oven (check your cookbook for weight and time)
Cuban Black Beans
bag of black beans
olive oil
2-3 slices of bacon
chopped onion
pepper, salt, oregano, cumin, and garlic to taste
(in the morning or the night before) Wash beans and pick out rocks. Put in large pot. Pour in water, 4 fingers of water above bean level. Add 2-3 T of olive oil. Throw in onion, bacon and add LOTS of the seasonings.
Boil, put the lid on, boil 10 min. Turn heat off, wait an hour, check water level (make sure its at least 2 fingers over) boil again 10 minutes. Repeat cycle, until beans are soft, adding water when necessary. Add more salt and garlic at end if it still needs more flavor.
(you know this is a real cuban recipe when there aren't amounts! )
Cuban Rice
3 c water
2 c rice
2 1/4 water
1 1/2 c rice
1 1/2 c water
1 c rice
**HOWEVER MUCH RICE YOU WANT TO COOK, USE THAT AMOUNT OF WATER AND THEN 1/2 AGAIN AS MUCH
Also, USE bagged Long Grain rice (none of that minute rice crap)
Bring water to a boil, add a couple dashes of Garlic salt and a dollop of oil. When boiling, drop in rice, and bring back to a boil.
Cover, turn heat to med-low to Low, and cook, COVERED for 20-21 min.
Another great side to this would be Plantains, the fryable bananas. Buy them, and wait till they are almost black~ then slice them kinda thick, and fry them in veggie oil. Sprinkle some salt, and Super YUMMM!
and don't forget desert~
Cuban Flan
6 eggs
1 (14 oz) condensed milk
1 (12 oz) evaporated milk
2 tsp vanilla
1 c sugar
1/3 c water
Oven 350 degrees. Beat eggs until yellow and foamy. Add both milks and vanilla and beat well. Put in casserole dish and cover with lid. Place casserole dish in another ovensafe pot and fill with water up to half of casserole dish. Bake 1 1/2 hours. Remove, cool, and refrigerate. With sugar and water, bring to a simmer on stovetop, stirring until golden. Pour caramel on top of flan.
There ya go! Real cuban recipes from a cuban herself. We eat this all the time, and I grew up on this. This is also standard Christmas Eve (Buena Noche) dinner and New Years Day dinner. If you need any further explanations, feel free to email me
